How to spot it on a menu

Pizzerias call it a lot of different things. Look for any of these:

  • Cup and char or cup & char
  • Cupping pepperoni or cupped pepperoni
  • Roni cups
  • Natural casing pepperoni
  • Old world pepperoni (often, but not always, the cupping kind)
  • Brand names like Ezzo or Battistoni

Styles that usually have it

Buffalo-style: thick, airy crust, sweet sauce, cheese to the edge, and a sea of small charred cups.

Detroit-style: square pan pizza with crispy cheese edges. Many Detroit-style shops use cupping pepperoni, sometimes tucked under the cheese and sometimes on top.

Craft and New York-style shops: more and more independent pizzerias list cup and char as a premium topping.
